MUSHROOM CEVICHE

Ingredients:

  • 2 cups of mushrooms, diced

  • 2 tomatoes, diced

  • 1/4 red onion cut in cubes

  • 1/4 cup finely chopped cilantro

  • 1/2 cup diced cucumber (optional)

  • juice of 1 lime

  • 1 teaspoon of salt

  • pepper to taste

  • botko’s grain free crackers to serve

 

process:

  1. cut all the vegetables into cubes.

  2. add the lemon, salt and pepper and stir well.

  3. marinate around 20 minutes.

  4. serve with botko’s grain free crackers
