• 3 medium sweet potatoes, peeled and diced

  • 3 onions, chopped

  • 1/2 head broccoli, shredded

  • small bunch of fresh cilantro, chopped

  • 2 teaspoons paprika

  • 1/2 teaspoon chili powder - or more to taste

  • 1/2 teaspoon garlic powder

  • salt and pepper

  • 5 heaping tablespoons gluten free oat flour

  • olive oil



  • preheat oven to 220c/200c fan/425f

  • place the sweet potato cubes on a large baking tray covered with parchment paper. season with salt and pepper and drizzle with 1-2 tablespoons of olive oil.

  • roast in the oven for 30 minutes and let cool.

  • transfer the sweet potato to a large bowl and mash with a potato masher or fork.

    add the rest of the ingredients. season with salt and pepper to taste. mix well and form into small patties.

  • heat 2 tablespoons of olive oil in a frying pan over medium to high heat

  • cook for a few minutes on each side, then flip and cook for another minute or so until golden brown.
