MUSHROOM BROCCOLI SOUP

ingredients

  • 300 g Broccoli
  • 200 g Mushrooms
  • 1/2 onion
  • 30 mL extra virgin olive oil
process:
  • First we poach the finely chopped onion with a little EVOO in a saucepan.
  • Then, add the mushrooms and broccoli and cover with water.
  • Boil for about 7 minutes, or until the broccoli can be easily pierced.
  • Finally, blend everything with a blender and add the olive oil and some spices, such as salt and black pepper.
  • Eat with Botko's Grain-Free Crackers
